Rosemary & Garlic Leg of Lamb Roast

Ingredients

  • 1 boneless leg of lamb, 4 to 5 lbs.
  • 1/4 cup freshly squeezed lemon juice
  • 8 cloves garlic, minced
  • 3 Tbsp. chopped fresh rosemary
  • 1 Tbsp. kosher salt
  • 2 tsp. freshly ground black pepper

Directions

Preheat oven to 450°.

Pour lemon juice on leg of lamb and pat on garlic and rosemary. Season leg of lamb with salt and pepper.

Roast leg of lamb for 20 minutes. Reduce oven temperature to 325° and continue to roast leg of lamb until internal temperature reaches 145°. Let leg of lamb rest and serve.
